I thought I would post some recipes that I thought have been delicious, and healthy! If I can't post the link, then I'll just post the directions. As I find ones that I love, I'll continuously add to the list.

*Will and Madie's favorite! And we use turkey, instead of chicken. Delish with the avacado!

Ranch Roasted Pork Chops and Potatoes: *so easy and really good!
Ingredients: 4 boneless pork chops, 8-9 small red potatoes, 5 tbs. EVOO, small yellow onion, 1oz. Hidden Valley Ranch mix packet, 1/4 cup water
Directions: Heat oven to 350, slice potatoes into slices, slice about 10 onion rings, mix evoo and ranch in a bowl and dip pork chops (cover each side), place in a baking dish-- put potatoes in remaining ranch mix and cover, then place them around the pork chops in the baking dish and place onions on top of the chops and potatoes, add water and then cover the dish-- bake for 40-45mins, or until potatoes are tender.
